Wash, slice, season, and marinate the meat (min. 1 day in advance).

Bake it in the indirect heat of a kettle grill at 180°C for 2 hours.

After 10 minutes of grilling you can already start the smoking process by following the instructions on back of the packaging and repeating at least twice.
